It is no coincidence that top chefs all around the world pledge loyalty to the wide and thin universal knife, which translates to "The Three Virtues." The Shinku Santoku allows clean slicing of fish, meat, and vegetables with a razor-sharp blade. Its long-lasting sharpness and exceptional durability make it a reliable companion for years of kitchen use.

The blade measures 176 mm (6.9 in) with a height of 44 mm, crafted from 67 layers of Damascus steel surrounding a VG-10 core. Flat grinding on both sides ensures controlled, even cutting and supports left- and right-handed users. The uncoated surface allows direct contact with ingredients for natural feedback.

With an overall length of 313 mm (12.3 in) and weight of 0.218 kg, the knife feels balanced and composed in hand. Handles are made from colored resin with selected maple root wood, providing secure, ergonomic grips and fatigue-free control during extended preparation.

This knife embodies quiet precision, durability, and long-term usability through disciplined construction. Personalized engraving is available for names or initials, with each engraved order delivered in a complimentary gift box.

Close-up of the flowing Damascus-style pattern on the Okura 8.1-inch chef’s knife

THE STEEL. UP CLOSE.

A beautiful pattern. A serious cutting edge.

Look closer at the flowing Damascus-style pattern. These layered-steel blades bring striking detail to the kitchen, with a construction designed for durability and a stable cutting edge.

The pattern is only part of the story. Steel, edge geometry and how a blade is finished work together to deliver the crisp, controlled cut you feel in use.

Layered steel. Precision at the edge.

Good questions. Straight answers.

Which Okura knife should I start with?

For an all-round first knife, explore the 8.1-inch chef’s knife. Prefer a broader profile for vegetables? Consider the 7.1-inch chef’s knife. Choose a set when you want several blade profiles together.

Are all Okura knives made from the same steel?

No. Materials and construction vary by model. The range includes layered-steel and stainless-steel designs. Check Materials & Product Details above for the knife or set you are viewing.

What makes a knife feel sharp?

The cutting edge and the geometry behind it work together. A fine edge initiates the cut, while the blade profile influences how it moves through food. Regular sharpening and correct use keep the edge performing well.

Will my knife stay sharp forever?

Every kitchen knife needs maintenance. Hand wash, dry promptly and store safely. Sharpen when cutting begins to feel harder; avoid glass boards, bones, frozen ingredients and twisting the blade.

Is a set better value for me?

Choose a set if you will use the different profiles. If you mainly do general preparation, one chef’s knife may be the right starting point. Compare current prices and included knives before choosing.

Can I put it in the dishwasher?

Hand washing is recommended. Wash carefully with mild soap and dry immediately to protect the blade and handle. Never leave your knife soaking.

What is included with my order?

You receive the knife or set shown in the product details above. Blade lengths, handle materials and set contents vary by product.

What about shipping, returns and warranty?

Free shipping is included. Delivery estimates appear at checkout. Okura’s 25-year warranty applies under its terms; see the store’s return policy for return conditions.
