Place the knife against the angle holder on a stable surface. Make sure it sits securely before bringing the sharpener to the edge.

Roll along the edge

Roll the sharpener back and forth with light, even pressure. Work along the cutting edge without forcing the blade.

Turn the knife and repeat on the other side. Follow the supplied instructions for the finishing surface, then clean the blade before use.

Is this a rolling sharpener or a waterstone?

This is a rolling knife sharpener. The blade is supported by an angle holder while you roll the sharpener along the edge. You do not soak a waterstone or draw the knife across a flat stone.

Which angle should I use?

Use the 15° or 20° setting that matches your knife manufacturer’s recommendation. These are angles per side. Knife origin alone is not enough to choose the correct setting.

How long does sharpening take?

It depends on the steel, how dull the knife is and whether the angle already matches. A first sharpening can take longer than later touch-ups. Check progress rather than relying on a fixed number of strokes.

Will it work with every knife?

It is intended for compatible straight-edged kitchen knives that sit securely against the holder. It is not intended for serrated knives or scissors. Ask us before using it on ceramic, single-bevel, unusually small or damaged blades.

How often should I sharpen?

Sharpen when cutting performance starts to decline. How often that happens depends on how you cook, the blade and the cutting board. Regular light maintenance may be enough between fuller sharpening sessions.

Do I need water, oil or electricity?

The rolling process is manual and uses no electricity. Do not soak the sharpener. Follow the care instructions supplied with the set and remove residue with a soft, dry brush or cloth.

Can it repair chips or a broken tip?

Deep chips and broken tips require repair rather than routine edge maintenance. Ask a professional sharpener to assess damaged blades before using this set.
