6 Common Mistakes to Avoid With Titanium

Most sticking and discoloration traces back to a few habits carried over from coated pans — here's what to change.

Titanium rewards patience and consistency. Most of the issues people run into aren't faults in the pan — they're habits formed with older, coated cookware that don't quite translate. Here are the six worth unlearning.

1. Cooking on maximum heat

Titanium conducts heat efficiently, so high heat is rarely necessary. Cranking the burner scorches food, causes sticking, and brings on heat tint. Low to medium is enough for almost everything.

2. Adding cold food to an overheated pan

A screaming-hot pan plus fridge-cold food is a recipe for sticking and steam. Let the pan settle into a steady medium heat, and take ingredients out of the fridge a few minutes before they go in.

3. Turning food too early

This is the big one for sticking. Seared protein releases on its own when it's ready. If it grips the spatula, it isn't stuck — it needs more time, not more force. Let it be.

4. Skipping the preheat

Food dropped into a cold pan bonds to the surface as everything heats together. Give the empty pan a short preheat, then add your fat, then your food. More on why in Non-Stick Behavior, Explained.

5. Scouring off your seasoning

Metal utensils while cooking are fine — titanium is hard and durable. But scrubbing with steel wool or abrasive pads at cleanup strips the seasoning layer that gives you release. Soak stuck-on food and use a soft sponge instead, as covered in Cleaning and Maintaining Your Titanium Pan.

6. Cleaning while the pan is still hot

Plunging a hot pan into cold water shocks the metal for no reason. Let it cool naturally first, then wash.
