If your first eggs stuck a little, you're not doing anything wrong. You're just cooking on a different kind of surface than you might be used to — and once it clicks, it clicks for good.

Titanium is not Teflon

Coated pans get their slippery surface from a chemical layer sprayed on at the factory. It works from day one, then wears out over time and ends up in the bin. Your Okura pan has no coating. Nothing is added, so there's nothing to flake. Instead, release comes from a thin seasoning layer and a few simple habits — and unlike a coating, it improves with age rather than degrading.

Why food sticks, and how to stop it

Three things make almost all the difference:

  • Preheat the pan. Let it warm on low to medium heat before anything goes in. Food dropped into a cold pan grips the surface as it heats.
  • Add a little fat. A small amount of oil or butter, added once the pan is warm rather than cold, gives you an even, releasing surface.
  • Don't move food too early. Seared protein releases on its own when it's ready. If it resists the spatula, it isn't stuck — it just needs a little more time, not more force.

The learning curve is real
